Hoshikawa Coffee

Owner Oe had loved coffee since his teens and trained under Kono, president of a company that makes siphon brewing equipment, earning a Japan Barista Association license while working there. Roasting interested him more than serving drinks, so in May 2019 he opened this small shop three minutes from Hoshikawa Station on the Sotetsu line, built around a roasting machine that takes up most of the floor space.
There is no espresso bar and no table service, only a rotating list of specialty beans roasted fresh on site each day and sold by the bag, chosen for the season rather than kept as a fixed lineup with traceable origins down to the producer. The shop closes Mondays early for roaster maintenance and shuts on other days as soon as that day's roast sells out, so the selection changes constantly and beans rarely sit around.
