Cafe Unido Shaw

The glass fronted corner storefront of Cafe Unido in Shaw with its arched logo in the window

Cafe Unido was founded in 2014 as Panama's first specialty roaster and cafe, with a mission to bring the country's own coffees to the people who live there, and its Shaw cafe carries that idea to Washington. The shop pours coffee from Panamanian producers who work with volcanic soil, high altitude and shade, and the list of single origin lots leans on experimental processing and careful selection.

The bar is known for pour overs of rare lots, including Geisha, and the kitchen adds Panamanian and Latin American dishes, so the cafe works through the day from breakfast onward. Bags roasted in Panama can be bought at the counter or ordered online. Two more Unido counters operate in the city, one in the La Cosecha market in Union Market and one at Stacks in Southwest.
