Salvatore Fusari, who had already worked in coffee since the 1970s, founded this roastery in Bovolone in 2001, and it now runs as a family operation, the passion he describes as handed down from father to sons. The workshop deliberately narrows its focus rather than trying to do everything: single origin specialty and gourmet microlots sourced globally since the founding, alongside organic and conventional blends, all roasted to order rather than held in stock, and ground to measure for whatever method a customer actually brews with, moka, filter, Neapolitan or French press. The company earned organic operator certification in 2014, entitling it to process and sell certified organic coffee under a Mipaaf authorized control code.
Fusari was named an example of excellence in L'eccellenza delle torrefazioni italiane, a free guide to Italian roasters published by appliance maker De'Longhi with Slow Food Italy trainer Gabriella Baiguera, selected from hundreds of Italian roasting operations. Customers who order online report the shop sends a video of their coffee actually being roasted before it ships, an unusually personal touch for a mail order roastery. The retail spaccio in Bovolone keeps short weekday morning hours, a genuine day trip roughly 20 kilometers south of central Verona rather than a stop on a walk through the old town.
