Prototype Coffee

Prototype runs its roasting and its bar out of the same East Hastings Street room in Strathcona, with several countertop Aillio roasters visible from the counter and a rotating list of coffees that regularly runs past twenty options at once. Filter goes out through Gina brewers and other manual rigs, and the espresso program leans into deconstructed shots that separate and showcase different parts of the extraction.
The shop treats the room like a working lab more than a finished cafe, small and functional, focused on the coffee rather than seating capacity. Beans roasted on site are sold by the bag to take home or order online, and a second, smaller tasting room outpost operates a short drive away on West 5th Avenue for anyone who wants the same lineup outside Strathcona.
