Café Colomer

Café Colomer is a micro roastery and café in the Facultats district, close to the Universitat Politècnica de València. Lola Colomer started it in March 2021 after first meeting specialty coffee in Granada, where small shops with their own roasters were beginning to appear. Back in Valencia she travelled to Barcelona to learn how to roast, then built the place she had pictured, a neighborhood café with the roaster in the same room as the counter.
The coffee is roasted on a one kilo Toper machine imported from Turkey, one or two days a week, with a light to medium profile and no sugar or additives, never torrefacto. Origins such as Colombia, Guatemala and Honduras rotate through the menu. Beans are sold whole or ground to order, and the kitchen doubles as a creperie, with sweet and savory crepes and traditional Valencian horchata.
