Bluebell Coffee Co.

Marián opened Bluebell Coffee Co. in Ruzafa in September 2014 with her sister Yolanda and Yolanda's partner Erwan, the first specialty coffee shop in Valencia and named after a Scott Walker song about the flower. She'd spent time immersed in coffee culture in the United States before returning to Europe and collecting ideas on a coffee crawl through Berlin.

The shop has since started roasting its own beans in a warehouse outside the city, building a relationship with a Dominican Republic farm known for an innovative honey process. A striking blue La Marzocco anchors the counter, and the flowery courtyard makes the weekend brunch one of the more photographed tables in the neighborhood.
