Santaromero Coffee

Santaromero opened in October 2023 as a small roastery and coffee shop in Borgo Rossini, built around one country, Colombia. Its founders studied gastronomic sciences at Pollenzo and look at coffee from the farm first, buying directly from producers they call friends and roasting in small batches to show each grower's work.

Visitors can take home bags of whole bean coffee, with Colombian lot names such as La Morelia and Nariño and a decaf listed alongside, or have a filter coffee brewed at the counter. The team also leads guided tastings that compare coffees side by side, which makes the room as much a place to learn about origin and roasting as a place to buy.
