Panificio Papale

A San Salvario bakery for more than a century — the shopfront still carries the old 'Panificio Fratelli Ubertalle' sign from before the Papale family took it over in the 1970s — reinvented for specialty coffee after a full renovation by Turin's Unduo Laboratorio di Architettura and an October 2024 reopening under the current generation, siblings Gisella and Roberto. The coffee side was built with consultant Alessio Simonetta, previously of Orso Laboratorio Caffè a few doors down the same street, who spec'd a Victoria Arduino Tempo multi-boiler machine, a Mythos grinder, and a dedicated X54 for decaf and filter.

The result pairs a genuine neighborhood bakery counter — bread, biove, taralli, stuffed focaccias — with an espresso program built by someone who came up through one of Turin's best-regarded coffee labs. Open early Monday through Saturday with a Mediterranean midday break most weekdays, straight through on Saturdays, and closed Sundays.
