Orso Laboratorio Caffe Borgo Rossini

Orso opened its second room in March 2025 on Via Cagliari in Borgo Rossini, in a space that once held a bicycle workshop with a bar. The idea is the one that began in San Salvario in 2014 and still guides co owner Alessandro Minelli, who is also part of the Giuliano Caffe roastery in Caluso: coffee as a journey from bean to cup, with single origin microlots chosen from selected plantations and swapped for new ones as each runs out.

Espresso sits alongside V60, Aeropress and French press, so one coffee can be tried several ways. The room also hosts talks and workshops under the name In the Bear's Cave, which suits an unhurried afternoon on the far side of the Dora from the old centre.
