Spaccio Pani

Spaccio Pani opened in December 2023 as a sourdough bakery built around a short supply chain, more panificio than coffee shop at heart, but the coffee program has earned it real recognition beyond the bakery crowd, one of only a couple of Trieste addresses with that kind of specialty coffee credibility. Filter coffee gets brewed by the batch alongside espresso, sourced from small roasters like Bianca Tosta rather than the big commercial suppliers most bakeries default to.

The room sits under a vaulted ceiling near Piazza Venezia, a quiet residential corner of the city, and the reputation here rests on the bread and pastries as much as the cup, sourdough loaves, focaccia, and pastries among the best in Trieste. A good stop after wandering the piazza rather than a destination coffee bar in its own right.
