Virgule

Charles, a former oceanography engineer and researcher, left that career to open Virgule on Rue des Lois around 2019, the first fully vegan coffee salon in Toulouse. The idea grew out of years of seeking out cafes on his travels, and he built Virgule as a quiet room just off the Capitole where anyone could sit down with a coffee regardless of diet.

Every drink and dish on the menu is plant based, from the specialty coffee, cappuccino and latte to the tea, organic infusions, milkshakes and fresh pressed juices, and the pastry case holds cookies, brownies and banana bread made by Toulouse bakers. The kitchen also turns out avocado tartines, sandwiches, seasonal salads and a vegan grilled cheese, with gluten free options available on request.
