Angel, Ying and Jonathan opened Les Infiltres on Rue Peyras in December 2024, a couple of doors from the Capitole and the Pont Neuf, filling the room with raw oak benches and a calm, bright layout meant for lingering over a coffee or a laptop. It is one of the newest specialty coffee shops in central Toulouse, arriving well after the first wave of shops that opened around the Carmes district.

The coffee is roasted by a specialty roaster based in Lille and screened to a Specialty Coffee Association score above 80, served alongside handmade pastries and a brunch menu with both sweet and savory plates. Vegetarian, vegan and gluten free options run through the food menu, and everything on it is also available to take away.
