La Brulerie des Filatiers

Julie Roubaud and Guillaume Marquie opened La Brulerie des Filatiers in February 2014 in the Carmes quarter, wanting to build a neighborhood roastery around genuine craft rather than volume. What started as bean sales aimed at home drinkers has grown into supply relationships with local restaurants, cafes and offices, while the shop has stayed in the same storefront on Rue des Filatiers, open seven days a week in the historic center.

Every batch is roasted in house on a Giesen roaster, with the team adjusting the curve for each origin before the beans go into the grinder for the espresso bar. The counter runs on a Victoria Arduino Black Eagle Maverick machine paired with a Mythos grinder, pulling espresso based drinks to stay or to go, and the summer menu adds a house made cold brew charged with nitrogen. Coffee is also sold loose by the bag, whole bean or ground to order, for anyone who wants to brew the same roast at home.
