Subtext Coffee Roasters

Alex Castellani spent years sourcing coffee for Boxcar Social before starting Subtext in 2020, drawn to get closer to the farms and producers behind the beans rather than just the finished cup. The roastery and tasting bar sit inside a converted industrial unit in the Stockyards District, a stretch of west end warehouses that has slowly filled with small food and coffee businesses over the past decade.

Subtext roasts single origin lots only, skipping blends and dark roasts entirely in favor of coffees that show their region and producer clearly, with colorimeters and refractometers used to keep every batch consistent. The shop publishes an annual transparency report listing what it pays for green coffee, and the short weekday only hours reflect a genuinely small operation more focused on the roasting than on running a full cafe.
