Arise Coffee Roasters

Taiju Hayashi spent ten years at a wholesale coffee roaster before deciding he wanted to actually meet the people drinking what he made, and opened this corner shop in 2013 on a quiet residential block in Kiyosumi Shirakawa, a Koto ward district of canals and old wood merchant warehouses that later became known for coffee before the neighborhood's bigger names moved in. Arise was roasting here before any of them.

The shop is little more than a counter and a roaster crammed into a converted storefront, with room for a handful of seats. Hayashi rotates six to eight single origin lots at a time, drawing regularly from Ethiopia, Kenya, Guatemala, and Honduras, and pairs the hand drip list with fresh bread baked daily by a local partner bakery, Kotori Pan, rather than running a kitchen of its own.
