Sortie opened at Agiou Georgiou 3, right against the archaeological square that holds the Rotunda, giving its garden tables a straight view of the monument built in the fourth century. The shop roasts its own beans rather than buying them in, selling bags in origins such as Kenya, Uganda, Costa Rica and Colombia alongside a house blend, plus V60 and espresso brewed to order throughout the day.

The garden seating stays open long past most Thessaloniki cafes, running from early morning into the evening seven days a week, and welcomes dogs at the outdoor tables. Beans are roasted in small batches for both the walk in counter and an online store that ships bags with brewing notes for each origin.
