Kolektiva Lab

Roasters Kolektiva opened this first Kolektiva Lab in the northern suburb of Sykies in 2018, built around the idea of bringing single origin coffee to a city that had mostly grown up on Greek and frappe coffee. It remains the brand's original room and its coffee education base, running tastings and SCA certified barista seminars alongside a daily espresso and filter bar, before the concept expanded into further Lab locations across Thessaloniki including Neapoli and a self service espresso bar in Kalamaria.

Beans are roasted and sold under named microlots such as a Kenya Ayaan, a Bolivia Alpaca and a Mexico Sinai that placed in a Cup of Excellence competition, alongside an office coffee program pairing equipment with rotating single origin subscriptions. The Sykies room opens early and stays open into the evening every day of the week, drawing a steady local crowd rather than a passing tourist one.
