Shavi Coffee Roasters

Shavi Coffee Roasters began in Tbilisi in late 2021, founded by Americans Ryan and Laurie McCarrel with business partner Thibault Flament, and it was one of the first specialty roasters in Georgia. The Garage is the Sololaki branch on Lado Asatiani Street, a former garage turned minimal, clean room with a small patio outside.

The coffee is roasted in small batches in Tbilisi on a Giesen, aiming for fruit, flowers and sweetness rather than bitterness, with rare lots bought from producers the team can name. Come for a cup or beans to take home. Shavi also trains baristas and hosts cuppings, and The Garage serves every day from half past eight until seven.
