Lin Tung Yuan, known internationally as Van Lin, won Taiwan's first ever national barista championship in 2004 and opened GABEE in the Minsheng Community that same year. Three years later he became the first barista from Taiwan to compete at the World Barista Championship, held that year in Tokyo, placing 14th and putting the shop on the radar of a coffee scene that barely existed in Taiwan at the time.

The menu leans inventive rather than purist, built around drinks like a sweet potato espresso finished with a crisp caramelized sweet potato slice, served more as a composed dessert than a straight cup. Lin has since trained generations of competition baristas and consulted for brands across Asia, while the original Songshan room keeps selling its own roasted beans alongside the stranger items on the menu.
