Founders Shoji Sasa and Dan Yee, both established figures in Australia's specialty coffee scene, built a bar on Bourke Street with one deliberately narrow focus: coffee, and only coffee. There is no food menu, just a silver Synesso espresso machine up front and a roasting machine at the back, set against Japanese Nordic styling of a brass counter and plywood walls.
Every bag on the shelf is roasted on site, so the espresso and filter list changes with whatever the pair are currently dialing in, a rotation regulars track closely rather than default to one house blend. Tucked into a quieter stretch of Bourke Street away from Surry Hills' busier cafe strips, the room stays small and unhurried, built for people who came specifically for the coffee rather than a table to sit at.
