Knut Lekvam runs Kaffiknut out of a small basement space in Salvagergata, roasting his own coffee on equipment he built by modifying a popcorn machine into a working roaster. What started as an experiment to see whether the machine could produce a decent cup turned into a full bar, with Lekvam roasting and pulling every shot himself.
The operation stays small and personal by design, open only a few days a week rather than a full daily schedule, and regulars describe it as closer to visiting someone's home kitchen than a conventional cafe. Self roasted beans are sold by the bag alongside the espresso and filter service.
