DABOV Specialty Coffee

Jordan Dabov and Vesela Vladimirova founded DABOV in 2008 after returning to Bulgaria from the Czech Republic, determined to bring specialty coffee to a market that had effectively never had access to it. A roasting program followed in 2010 on a refurbished 12 kilogram Probat, and Jordan has since become the only Bulgarian invited to sit on the international jury of the Cup of Excellence, evaluating lots from farms across Brazil, Colombia, Costa Rica, Nicaragua, Honduras, and Mexico.

The Angel Kanchev room is one of several DABOV locations across Sofia and beyond, each pouring the same roastery's beans and stocking retail bags for anyone who wants to bring the coffee home. Limited edition single origin releases rotate through under the Star Coffees Collection name, numbered and sold in small batches as they come available.
