Virgen Coffee

Pedro Sierra Pradas left a career as an aeronautical engineer to open Virgen in April 2015, a narrow takeaway counter tucked behind the Metropol Parasol that became one of the first shops in Seville to call itself specialty coffee. He trained under Antonio Manuel Chavarría Rosa of Mr Chava Cafetería in Osuna, a figure widely credited with bringing specialty coffee culture to Andalusia, before returning to Seville to roast, brew and sell his own beans under the Virgen name.

There is barely room to stand at the counter, let alone sit, so most orders leave in hand for the walk toward the cathedral or Las Setas. The signature Regina cappuccino, built on a house caramel note, sits alongside straight espresso and filter options poured from beans roasted just steps from where they are served.
