LATE. opened on the corner where Calle Amor de Dios meets Pérez Galdós, a stretch of the old town just south of Alameda de Hércules that has filled in fast with small specialty counters over the past few years. The espresso program leans toward bright, floral beans, and the bakery case next to it turns out a rotating list that has already built a following around its cinnamon rolls and a chocolate chip cookie hybrid regulars call the brookie.

Matcha gets the same care as the coffee, whisked to order rather than mixed from a premade base, alongside cortados, flat whites and cold brew poured through the day. The room doubles as a quiet work spot midweek, with enough outlets and table space that laptops show up as often as pastry orders.
