Protokoll Yeonhui

Protokoll's study room interior, a shared desk with wall lamps and a mirror beneath a wide window etched with the PROTOKOLL wordmark, tree canopy visible outside

Protokoll takes its name from the German word for record, and the Yeonhui dong shop treats coffee the same way its roasting team treats a logbook. A brick facade and tall wood framed windows mark the entrance up a short outdoor stairway, opening onto a second floor room built around long shared desks, drafting cabinet style storage and a bar where every roast profile and brew recipe gets written down.

The house runs two signature blends, a dark chocolate and brown sugar leaning Super Normal and a brighter, berry forward Fruity, both with full cupping notes printed for anyone curious, alongside a rotating cast of specialty single origin filter beans. The shop roasts on site on STRONGHOLD machines and now supplies beans to more than a hundred partner cafes nationwide, but the Yeonhui room itself stays a loud, classical music filled space that regulars treat as a long table for working over a slow cup.
