Gray Gristmill

Gray Gristmill is a specialty coffee room on a Sinsa dong side street just off Garosu gil, built around the idea of serving one person at a time. Each cup is made by a single barista, and the team roasts in house on a fifteen kilo Loring Kestrel, cupping sample roasts by roast date before settling on a profile.
The beans are specialty grade micro lots chosen by cupping, and the team travels to origin to select them. Roast profiles take local water quality into account, and defective beans are removed again before packing. Coffee is sold in the shop's own bags over the counter and online. The cafe opens at eleven in the morning and closes at half past eight in the evening, every day of the week.
