Mike Prins founded Herkimer in 2003, and the Phinney Ridge flagship has run as both a working micro roastery and wholesale office ever since, known in the local scene for a staff that tends to stay five to ten years rather than cycle through quickly. Direct trade sourcing and a focus on clarity of flavor over showmanship run through the roasting program, a Tanzania Ruvumana V60 among the standout single origin pours.
A cortado is the drink most associated with the shop, and Herkimer's reach extends past its own three current locations, Phinney Ridge, Ravenna and a newer Belltown room opened in 2020, since Herkimer beans are also the house pour at Analog Coffee on Capitol Hill. A fourth, older location on Dexter Avenue has since closed, leaving the current three as the active footprint.
