Day Made Kaffe Bar

Ashley Day, known as Ash, worked as a barista at Copenhagen's Coffee Collective before opening this Pioneer Square bar in July 2025, modeling the room explicitly on Scandinavian cafe culture down to insisting on west facing windows for sunlit afternoon service. Coffee Collective beans, rarely available in the United States, anchor the espresso program, with Olympia Coffee brought in for milk forward drinks and a Kalita Wave used for pour over.

Wine and affogatos round out the later part of the day, and the shop earned a feature on La Marzocco's own blog along with a spot in Seattle Magazine's piece on the city's next generation of coffee shops, strong signals of industry attention for a room barely a year old at time of writing.
