Husbands Daniel and Ismael Calderón opened Bonito in September 2024, growing it out of Aquí Mercado, a pop up market the pair started because they missed the Latino community and market culture of home. The café is the only one in the Pacific Northwest pouring Provecho Coffee, a Mexican owned roasting company, a sourcing choice that runs through a genuinely culturally specific menu built around espresso with Mexican Coke, cafe de olla syrup drinks and a vegan horchata.
Weekends deliberately drop wifi in favor of live DJ sets and community programming, a choice the owners frame as prioritizing the room over laptops, while weekday wifi stays on for anyone working. A year in, Capitol Hill Seattle News ran a retrospective confirming the community traction has held, part of what Eater Seattle frames as a new generation of Seattle cafes moving past an older, more European centric aesthetic.
