Jake Paulson and Mike Steiner, both former audio engineers, started Anchorhead in 2013 roasting out of a garage and bottling cold brew for farmers markets before opening this downtown room inside CenturyLink Plaza. The pair took top honors at the 2015 America's Best Espresso Competition, and both were later named Seattle Rising Stars for roasting by StarChefs in 2020, credentials that back up a shop built as much around technical rigor as approachable espresso.

A partnership with Macrina Bakery produces the quaffle, a cinnamon roll, croissant and waffle hybrid that has become something of a signature alongside drinks like Honey Bunches of Cold Brew and a blueberry matcha. Anchorhead has since opened further locations at Pike Place Market and on Capitol Hill, this CenturyLink Plaza room remaining the downtown flagship.
