Siblings Boram Um and Garam Um built this shop around their family's own farm, Fazenda Um, which grows more than thirty eight coffee varieties. Boram won the World Barista Championship in 2023 representing Brazil, the country's first title in the competition, on top of three Brazilian national titles, while Garam is an SCA certified instructor who founded Um Coffee Academy, reportedly the first school in Brazil to offer the full SCA Coffee Skills Program.

The farm's own harvest is roasted weekly in house across roughly fifteen coffees at any given time, split into varietal, selection and nanolot tiers, with a Roaster's Choice pick that changes monthly. A second unit operates in Pinheiros.
