Coffee Lab

Isabela Raposeiras won Brazil's first national barista championship in 2002, after an earlier career as a dancer, actress and English teacher, and went on to found a coffee training school in 2004. The roastery followed to supply small Brazilian producers with a real outlet, and the cafe itself grew out of the school's own tasting room, opening in 2009 as what is now widely regarded as the country's most awarded specialty coffee operation.

Coffee is roasted weekly on a 12 kilogram Diedrich, with custom profiles built for each microlot rather than a single house style, all sourced from within Brazil. The shop still runs as a working extension of the school, so the counter doubles as a classroom for anyone curious enough to ask.
