Steady State Roasting runs a cafe in Carlsbad Village, with a second cafe in San Marcos, and roasts the coffee for both. The lineup splits between Daily Essentials, steady coffees that speak to the classic flavors of their growing regions, and Limited Offerings, rare small lots with more exotic flavors, all roasted to highlight each coffee's character.

Single origins from Peru, Ethiopia, Colombia and Costa Rica sit beside blends with names like Space Traveler and Way Out, and anaerobic, honey and natural processed lots appear among the limited releases. The shop sells bags up to five pounds, a monthly coffee club and subscriptions, takes orders ahead for pickup, and the Carlsbad cafe is open from seven to four every day.
