Less a single cafe than a curation project, Pergamino describes itself as a 'coffee lab' built around roughly twenty artisanal microroasters rather than a single house roast — a coffee-corner model that's since expanded into multiple small satellite locations around Piazza del Risorgimento rather than staying a single address. It sits directly across from the Vatican walls, in Prati, a neighborhood that's become one of Rome's strongest specialty-coffee districts in the past few years.

The current room is an arched, brick-vaulted space with beer taps behind the counter alongside the espresso gear — a different setup from the sidewalk-only stand-up stop once associated with the name, consistent with reports of a move into or alongside a bar venue. One blend is roasted for them by Torrefazione Lady Cafe, but the broader draw is the rotating selection from other roasters rather than an in-house program.
