Onesip opened in 2016, back when the center of Prague had almost nowhere serious to get a coffee, and co owners Adam and Zdeněk built the bar around Round Hill Roastery beans and a Kees van der Westen machine from day one. Nearly a decade on it is still barely bigger than a hallway, one counter, a couple of stools, and a small street window onto Haštalská, a quiet cobbled lane in Staré Město that fills with people standing outside cup in hand because there is nowhere else to put them.

The beans rotate through a small group of roasters the owners trust rather than sticking to one house blend, Round Hill alongside Ajala, Café Jen, Candycane and The Coffee Collective, plus bags and house ceramics to take home. Zdeněk Hýbl, one of the owners, placed third at the Czech Barista Championship and ninth at Coffee Masters London, and that competition background shows in a flat white and hand brewed filter that regulars rate among the best pours in the city center.
