Hakko takes its name from the Japanese word for fermentation, and that idea runs through a Rua do Rosário spot where owner Tiago Teixeira bakes the bread every day and builds a coffee bar, a pastry counter and a rotating kitchen under the same roof. It sits among the galleries and cafés of Cedofeita and works as a slow morning stop as much as a lunch one.
The coffee program is run with the same care as the baking: a powder blue La Marzocco Linea Mini and Mahlkönig grinders pull espresso and filter from some of northern Europe's leading specialty roasters, including La Cabra, Coffee Collective and Onyx, so the beans on offer change with the season rather than following a single house roast.
