Hypnos Coffee Williams

Hypnos is a design forward coffee bar that Andres Echeverria and Michael Taylor founded in 2023 after moving to Portland from Ecuador and South Florida, and this North Williams Avenue cafe is the original. The room is bright and airy with a European inspired look, a natural wood fronted bar topped in white stone with arches along its front and globe pendant lights overhead.

The focus is rotating single origin espresso, pour over and batch brew from local and international roasters, with Coava among the coffees on the bar, all pulled on a Slayer Steam LP espresso machine. Andres develops the house made syrups and sauces behind the counter, which anchor a seasonal menu with signatures such as the Marron Latte, made with chestnut sauce, and the Bon Bon, an Ecuadorian chocolate mocha. A second Hypnos opened in Nob Hill in September 2026.
