Mythical Coffee

The bright white interior of Mythical Coffee with a terrazzo fronted counter, three globe pendant lamps, a teal tiled back bar, a coffee menu on the wall, a shelf of coffee bags and gear and blue chairs at timber tables

Mythical opened at the end of 2019 on Gilbert Town Square, founded the year before by former baristas Eric Hervey, Katjriana Marker and Courtney Gifford, who put in their own savings and built much of the shop themselves. The coffees carry names drawn from world mythologies, and Hervey roasts them in small batches on a Loring Kestrel, with a Roest sample roaster for smaller experimental lots.

The room is a calm white space with bold, colorful branding, serving espresso, filter coffee and seasonal drinks made with syrups the team prepares in house, many of them gluten free and vegan and marked on the menu. The coffee bar runs from seven until four every day, with the kitchen open until two, and bags of beans are sold at the counter.
