A stone's throw from Place de la République on the corner of Boulevard Saint-Martin, République of Coffee is one of the larger and busier specialty rooms in the city, sober and modern inside, run by a young team, and it roasts its own coffee. Fresh juices, house pastries and generous plates with a Mexican accent keep it full through lunch, and it is one of the few serious coffee bars in this part of town where a laptop is not frowned on.
