Georges and Anthony Karam, Lebanese expats, opened Partisan on Rue de Turbigo as a place where argument and ideas were welcome as much as coffee, and the roaster is in the room: an imposing machine that runs through the day, turning out bags of Kenyan, Colombian, Ethiopian and Indonesian lots depending on the season. Georges, a financial analyst before this, approaches extraction like a physicist and the history of Paris cafés like a historian, and the room reflects both, more salon than coffee bar.

Partisan is first a roaster, so the espresso and filter are the point, but there is enough food to stay a while. Open every day, from half eight on weekdays.
