Byungchul Kim, who goes by Harry, trained at April in Copenhagen, Fuglen in Norway and Dotcom Space before opening his own room on a quiet street off Rue de la Roquette, and the showroom name is accurate: it is a calm, blond wood space with bold colour accents, built to show what his roasting does rather than to turn tables. He roasts in Paris, light, letting variety, origin and terroir carry the cup, with a rotating shelf of single origins such as a Buku Sayisa natural and a washed Finca El Puente, and the occasional geisha.
Espresso, filter and milk drinks are all on the board, but the house signature is a milk brew, coffee cold steeped for twelve hours in whole milk until it tastes of caramel, at eight euros. Closed on Wednesdays, open at the weekend, and the design nods to Korea, Japan and Scandinavia at once, which is roughly the coffee lineage of the man behind the counter.
