The 2025 opening that the current Paris lists agree on, Forêt Forêt is a botanical coffee room on Rue des Tournelles at the eastern edge of the Marais, greenery everywhere, the name doubled for emphasis. The approach is precision pour over, brewed with care and served in ceramic cups, and the beans come from Fève, the Paris roaster that supplies a growing number of the city's better bars.

It is new enough that some details are still settling, but the intent is not in doubt: a serious filter bar dressed as a forest, a few streets from Place des Vosges, open every day from half eight on weekdays and nine at the weekend.
