Bar Vabres has stood on Via Michele Cipolla since 1969, three generations into the Vabres family's rotisserie and pastry counter, best known across Palermo for arancine and Sicilian pastries carried out by the tray. Third generation barista Alessio Vabres took early specialty barista courses and brought a serious coffee program back to his grandfather Felice's old neighborhood bar without touching the food side that built its name.
A two group machine paired with a Mazzer Robur and an EK43 grinder now pulls espresso and flat whites from a rotating bean selection that includes guest roasters like Friedhats alongside local names, with Chemex, V60 and French press on offer for slower cups and a ready made cold brew can for the counter. Most people still come first for the rotisserie case, but the coffee side has become a reason to queue on its own.
