The coffee itself rotates between guest roasters rather than a single house bean, so what's on offer changes more often than the menu board suggests; this is a shop built around welcome rather than a signature roast. Grønland is one of Oslo's most ethnically diverse neighborhoods and one of its fastest-gentrifying, and Papegøye — under its earlier name, Neongrut, and since — has positioned itself as part of the older, more mixed version of the street rather than the newer one replacing it.

It's less about a signature drink than about being a place people from the block actually use, which is increasingly rare in a neighborhood that changes a little more every year. Merchandise and clothing from local designers round out a retail corner that matters as much to the shop's identity as the espresso machine does.
