Nelle's launched in 2012, founded by four friends under CEO Charles Saysette, who named the brand after his own daughter, and has since grown into a small local chain. The Filosoffen branch sits inside the Kunstbygningen art building overlooking the Odense River, its interior designed by Stupid Studio to feel distinct from the chain's other rooms while keeping the same underlying identity.

All branches, Filosoffen included, pour the same organic dark roast espresso blend sourced from cooperatives in Honduras, Nicaragua, and Ethiopia, plus a medium roast Brazilian filter blend, both roasted at a micro roastery in Haarby on Funen and brewed on Rancilio Classe machines. The Filosoffen room adds a riverside terrace, a free upstairs art gallery, a Saturday running club, and Sunday morning yoga on top of the coffee and wine program.
