Brothers Mads and Jonas Klindt started out as Koffiboys, a mobile coffee cart inspired by street vendors they met traveling through Thailand and Cambodia, before opening Café Sølle with a third co founder, Xenia Søllingvraa, in December 2020. The shop pours light roast single origin Ethiopian coffee across three varieties, sourced from Holy Bean Coffee Roasters, a women owned micro roastery in nearby Aarup, alongside home baked sourdough and cardamom buns.

The room splits into small, candlelit nooks under exposed timber beams, a retro rustic look that feels closer to someone's living room than a cafe. Laptops get banned after 2pm to keep the space social rather than turning into a row of screens, a house rule the owners have kept since the earliest days of the cart.
