Variety Coffee Roasters

Variety has operated in Brooklyn since 2008 and has grown into a small chain of cafes across Bushwick, Williamsburg, Greenpoint, the Upper East Side and Chelsea, plus its own by appointment roastery. This Bushwick cafe and roastery took over a former paint store on Wyckoff Avenue, a build out owner Gavin Compton undertook after deciding to commit the company's future fully to in house roasting rather than outside ventures.

The shop leans into consistency over trend chasing, describing its own goal as being the reliable king of the daily brew rather than chasing novelty drinks. Retail bags are sold alongside the daily cups, the roastery side of the business now as central as the cafes themselves.
