Sey Coffee

Lance Schnorenberg and Tobin Polk started roasting coffee out of a Bushwick loft in 2011 under the name Lofted Coffee, long before they rebranded to Sey and opened this Grattan Street cafe and micro roastery. The house style leans Nordic, deliberately light, built to let each coffee's own character come through rather than covering it up, an approach that earned Sey a Best Coffee Shop in America title in 2019.
The room itself is deep and airy, built around a roll up garage door and three skylights that flood the concrete and plants with daylight. Laptops are allowed on weekdays only and banned outright on weekends, a rule that keeps the space social rather than turning into a shared work lounge, and dogs are welcome at the outdoor seating out front.
