Maison Karlie roasts its own beans in a small operation on Rue Pastorelli, rotating through single origins from Nicaragua, Ethiopia, and Colombia depending on the week. The espresso, cappuccino, and flat white are all pulled from that house roast, and the counter turns out a matcha latte alongside them for anyone skipping caffeine from coffee.

The signature move is a fresh madeleine, warm and often dipped straight into the cappuccino foam, alongside financiers and a pastrami sandwich at lunch. Karlie runs the front of house herself and most regulars mention her by name, a few streets from Place Masséna in the heart of central Nice.
