Feldi, a trained chef, and Ilan, a self taught roaster with a background in photography and writing, started Stray in November 2021 as an online only micro roastery, selling bags before they had a room to serve coffee in. The Westend cafe followed in April 2023, and the two have kept the voice on their own site casually first person ever since, still signing off as 'the same two guys behind it.'

The roasting itself moved out of a shared facility and into its own dedicated space nearby in March 2026, built around a light roast style meant to show off where a coffee actually came from, sourced directly and traceably rather than through importers. The Gollierstraße room is bright and open, walls covered in gig posters and pop up flyers, with a menu that runs to Franzbrötchen alongside the espresso and includes vegan and kid friendly options. Dogs are welcome throughout.
